Honor's, food, people, class!

I've eaten more tofu in the past couple days than in the past couple years! Haha, I like it. Thing is, the dining halls have these green, yellow, and red labels for healthy, bad, and horrible foods; but orange glazed tofu is on the healthy list, and there's sweetener in it =/ I guess I just don't like that I have to trust someone else's judgment on whether something is healthy or not. Pesto sauce was colored "horrible," but is that just because of all the fat from olive oil? Or maybe some other random oil? Mer...I just realized that healthy olive oil is a thing of the past while I'm here...   That and desserts sweetened with healthy/natural sweeteners. I've got meal figuring out to do.... =/

My sociology class seems like it'll be really interesting! (It must be if I could tolerate ~28 pages of hw!) The prof was talking about like....different realities in different cultures, saying how other cultures would think it ludicrous to spend hundreds of thousands of dollars to get an education just so you can go make money by being under the control of some company. He said other interesting things too, but all in all, I liked what he said. I wish I could just learn useful life skills and not spend a stupid load of money at college....
I love how I'm in class with SO many people who I live with! It's awesome! Props to Brockport for what must've been an incredible amount of work to make and coordinate different schedules. Between orientation, honors, LLC, and classes - I'm with a lot of familiar faces =)

Piano

Finding a piano had to be the best thing that happened to me today! There was no one else in the room who I might've disturbed by playing; Hodu L'shem, You belong to me, Everyday, Kadosh Atah, and Your Name are what came pouring out of my memory, voice, and fingers. Amazing little time of worship! Felt like I found home =) What a blessing from God.

Good other things too! Church, church lunch, little birthday party, and...meeting people! All I gotta do is be in my room, someone walks by, and say "hey! what's your name?" =D

All moved in & such!

Wow so much has been going on; Bport has had loads of meetings to keep me busy with!
The best part by far is randomly meeting believers! I've met at least 5, & I'm going to church with....2 or 4 others on Sunday! Having gone to CCA is turning into another blessing, just telling people where I went to school brings up the whole topic of my beliefs (generally)! So meeting these people has been the highlight for me!

[Aww, yes! I just looked over to my left & found my deo that I couldn't find yesterday! I was kind of just bummed about it until I thought, "Why not just pray?!" Sa-weet! =) ]

I'm a little anxious about classes starting Monday....but....Idk why I'm doubting my abilities/God's help so much...!? =/

I should get to bed! Class at 9 tomorrow! =/

Bolognese Spaghetti

This sauce is SO phenomenal...I ate a bowl of it without pasta! I love homemade pasta sauce, I adore bolognese sauce, and I had to interrupt my packing to share this!!
So this is the original recipe, but I made it back in June 2010, so redoing by the rules is boring.
My version:

  • < 1/4 cup? olive oil 
  • 1.25lb 99% fat free ground turkey (Perdue - hormone & steroid free)
  • same onion
  • same carrot (but I left the peels on)
  • a randomly large amount of pre-minced garlic, more than a heaping spoonful
  • 28 oz +<2 cups diced tomatoes (using up leftovers)
  • ~2 2/3 c tomato sauce (ditto)
  • 2 frozen cubes tomato paste (ice cube size)
  • 5 oz frozen spinach
  • ~1 cup pumpkin puree (butternut squash or sweet potato puree is also   great!)
  • 7 basil leaves
  • same italian seasoning
  • same pepper
  • no salt
  • ~1 cup half n half (i always use fat free evap milk, but i didn't have it.)
  • 1 cup? beef stock
  • ~24 oz spaghetti/linguine mixture (whole wheat & multigrain)
  1. I followed step 1 of the directions, minus draining fat off.
  2. Next, I combined the diced tomatoes through the pepper in a big pot & started heating that while the meat finished.
  3. Added cooked meat mixture to pot.
  4. Cooked all that until I got hungry enough to cook the pasta...maybe 2 hours?
  5. Cooked the pasta
  6. And now I'm eating it as I type.
Out with a bang! My taste-buds went to heaven and the rest of me is going to college, no fair!

Line drying dilemma

I was so bummed yesterday evening to find little tiny bugs all over the towels and washcloths I had line dried! (They in were creases and the little "tufts".) An occasional beetle or something is super easy to get off, but not tiny little bugs that are smaller than fruit flies! I just wasted time and money by rewashing and machine drying them, especially since I was concerned that they might be laying eggs. Ga-ross!
I'm not ready to just give up though....even though, by default, I do have to give up while I'm at school =/
I'm thinking that maybe having them out from maybe 10-7 (?) might be part of the problem, long time + into the evening...
No fabric softener holds a candle to the smell a fresh breeze leaves, and I've read that rained on laundry smells amazing after! No laundry room has the beautiful morning breezes that God provides. Everything is just amazing about line drying besides the bugs. I guess I'll have to give it another when school gets out in May....unless I try it in the winter....uhh....?

Buttermilk syrup/sauce



I love it. The beautiful morning breeze & sun are just another reason to go out early and hang laundry instead of throwing it in the dryer.








I finally got around to making a better syrup for these German pancakes. I used powdered buttermilk when I made buttermilk syrup before (because we just don't buy it fresh cause it won't get used quick enough), and that's just a ridiculous texture. So I still didn't follow this recipe, I tweaked it into something healthier:

1/3 cup honey
1/3 cup low fat plain yogurt
1/4 olive oil
1/2 tsp baking soda
1 tsp vanilla

And I followed the directions except for boiling it for 7 minutes, I just did whatever for the time. It tasted fine; maybe not how it was supposed to taste, but...it was healthier.

Curried Coconut Chicken & Lemon Pasta Sauce

I made two tasty recipes on Friday, one of which I picked because I needed to use up the coconut milk from the vegan whipped cream for my chocolate cake. So there was 1/3 cup sugar in 25 oz of coconut milk, no biggie.

I really didn't make too many changes to the Curried Coconut Chicken...surprise surprise =P
Little less salt 'n pepper, little more olive oil, little more garlic, a full onion, and honey instead of sugar. Haha, maybe that sounds a lot changed, but not compared to the other recipe.
I don't think I've ever made a curry dish, cause I had this notion that it was a mexican spice....! It had a really nice smell, there's a sweetness to it.


I used olive oil instead butter and fat free evaporated milk instead of heavy cream in the Lemon Pasta Sauce. I know, those sound like big flavor changes, maybe they are, I'm just used to it. I don't know the last time I made a meal for myself with heavy cream, it's just too heavy and fattening when it could be lighter. I'd rather save those calories for some real whipped cream! Mmm mm!
So anyway, the lemon juice curdled the evap milk, ha, no biggie. I didn't get it at first! I was like..."did I heat this too fast?? or??"
Turns out that heavy cream doesn't get curdled by lemon juice, only its peak and thickness will be affected. So the sauce was unattractive looking, which made me feel like it wouldn't taste good; so I threw in 1/4 cup parmesan cheese to mask any look of separated fat and now I don't know what it tastes like without parm. I mixed my own portions of these two meals together and they were awesome! No icky separated fat problems!

Oh, I didn't have lime zest, and I ground my lemon zest in a coffee grinder because biting into a piece of that absolutely sickens me!
Oh, I also used 1/2 whole wheat linguine and 1/2 Barilla multi-grain spaghetti. I always mix up my pasta in attempt to make it the healthiest that I can. =)

a firm believer in always carrying a camera with me! So I took it with me to a friends house in case her daughter did something cute, but instead I caught these as a deer came within 27 feet or less of us!

I didn't quite get a rose to pull of my cute idea, but I love what I did as I worked with what I had! There's this field behind me that I never really saw potential in. I mean...all it has is that ugly Queen Anne's Lace!


Well, that "ugliness" actually resembles summer snow flakes up close.

Last exciting thing of the day? I made an awesome pumpkin bread tonight because of the coconut milk I wanted to use up from my vegan whipped cream experiment. What I changed?

-1/3 of my flour was white whole wheat
-used sucanat instead of sugar and reduced it to 1 cup. (still really sweet!)
&
-olive instead of vegetable oil
I wanted to mess around with substituting applesauce for some of the oil, and also honey instead of sugar; but I didn't want to cut out necessary liquids to make room for the honey. Maybe another time =)
(Oh, and it only took 57 minutes or less to bake.)

Other random things made my day productive and a blessing...God is good =)

Italian Peas

These Italian peas were really good with a couple of tweaks!
I just added 1/8 tsp of marjoram, oregano, sage, and basil (all dried) - cause how can they call it Italian without spices? - and increased the stock to about 8 oz.

Oh, I also didn't have enough peas, so half was peas, 1/4 was french cut beans, 1/4 was stir fry mixed veggies, and I threw in a tad of corn (all frozen).
Good healthy way to start lunch  =)

Sesame Chicken Stir-fry

Good recipe I made yesterday. What I did:

  • Increased to 4 servings (but only had 3 chicken breasts)
  • used honey instead of sugar
  • used 1/3 of the called for soy sauce
It was very saucy, so that sauce will probably get wasted if you don't serve it with rice (brown is the way to go). I thought the onion and red pepper was way overdone! =/ I'd prefer 1 onion, 1 pepper, and using broccoli for the amount that was left out.



I bought 18 washcloths for $4 yesterday! They'll be what I clean with instead of using paper towel =) One less thing to waste money on in college, and much cheaper than micro-fiber cleaning cloths.

I don't like my new bread....
Anyway, I don't really have a reason to ever
use jam or jelly again! =)

Walmart

Ehh, 2 things I don't like. (not my pic.)
I'm not too happy with Walmart recently. They've always had slow phone service (I can totally deal with that, I multi-task, but it speaks poorly for a company); it's super hard to find an employee for asking a question (one woman was covering like half the store last week! what is THAT?!); they've been out of white out for 2 or more weeks; they've been out of mattress pads for 3 weeks; they were out of cat litter today (except for one ripped bag); and they don't have white leggings (those seem like a basic item to carry *shrug*).
I mean...I can deal with all those things, none of those purchases are EMERGENCIES. But really, Walmart? You're like the biggest the store in the world? I've heard poor things about how this treat their employees too...
But I think they made up for it by having inexpensive chicken that is antibiotic free, fed an all vegetarian diet, contains no animal by products, humanely raised, and raised cage free! I picked the boneless thighs, they were ~$2.98. (The cheapest boneless product...why pay for bones?) I also found Perdue 99% fat free ground turkey with no hormones or steroids added! Yey for eating healthier! =)

I truly love Wegmans, like I'm slightly anti-walmart, but...sorry....Walmart has cheaper meat.
I don't like how Walmart is just so huge; I like friendly, personal 'mom & pop' stores, but I know that's how Mr Walton (I believe?) started...and he just superly succeeded. That's how capitalism works, and I'm all for that. Thing is....I probably root for the underdog. Someone used that phrase recently while referring to countries, and I can personally apply it to stores. I like small stores, I want them to succeed & stay in business! (But I don't want them to get disgustingly ginormous and greedy.) Nor do I want them using big business methods (or whatever) like mostly selling things from China that are made in sweat shops. (Honestly, I don't know anything about sweat shops, so maybe Walmart doesn't do that; but I feel like I've heard that, and I wouldn't put it past them. I should learn about them tho....sounds similar to the topic of Food Inc.) I don't even know why I like Wegmans better....they're a big store spread out through many states....
I dunno...Wegmans' clientèle seems a bit different too....     More caring about their appearances? Fewer come in looking like they rolled of bed. Ulgh.
Maybe they treat their employee's a lot better so that they actually like working there? I know Wegs has been at the top employers list for a longgg time. If I was looking for a teen job...Wegs would be my first stop probably. =)

Props to the sweet lady at walmart who gave me some mattress pad info over the phone tonight. She was sweet, polite, and sounded like she had a good attitude - I get the feeling that good attitude's are rare for working there =/ )



P.S. I was eating this cake today, and it is definitely more than decent. <3

Roses & seashell blue

I have the cutest picture in my head!
A single white rose in a bud vase filled with seashells.
I was thinking that adding a little blue dye would look cute too, but I realized I don't want my shells dyed.
It would go so well with my room! (I'll do a post about my room soon!)

Natural headache remedies

Caffeine didn't take away my headache the other day (a friend told me it's supposed to help with migraines.) By the way, that "mocha latte" was:

1/2 mug hot milk
1/2 mug just brewed coffee
1/2 TBS cocoa powder
1 TBS powdered sugar
vanilla

Microwaved the milk, poured the coffee in, stirred in the rest. It was nothing special or amazing, really; I think I liked this recipe better.

Anyway, the next morning, as I woke up with the previous day's headache, I googled 'natural headache remedies'. I read very little, but the 3 I liked the best were: drink water, rubbing peppermint on your temples, and exercise. So I grabbed a glass of water, peppermint extract from my fridge, intended to stretch & walk, but couldn't walk because a storm was coming. Will peppermint extract be a new beauty supply of mine? lol. I bet peppermint essential oil is the recommended product, but what's the difference? Alcohol & water are added, and maybe extract costs less.
I think I'll be looking into more natural remedies. =)

Sandwich for dinner

I just tried a peanut butter blueberry sandwich like I said I would! I should've put in more berries! =) The berries tasted great in it, but I'm not a ginormous natural pb fan (still, I eat it), so that's why I can't say the whole experience was amazing =P

I also made the vegan whipped cream this morning, like I said I would. It was more like...a thick glaze/thin frosting. It doesn't get anywhere near the delightful texture of whipped heavy cream in the few 20 seconds that it's supposed to be beaten =/ So ya...it tasted fine...it just wasn't whipped cream. I realized as I spread it on my chocolate cake that I was defeating the sugarless point of the recipe by putting this not-glaze-not-frosting on, lol. Oh well, I didn't put much on, so I could barely even taste it, but I could still taste the cake & it tasted good. =) The banana in it is a definite flavor. =)

Extra work yet paying less?

I don't understand why foods that have been processed/refined are cheaper than those that haven't been. Like sugars. I get charged more to buy something that some company has spent time and money stripping of all it's nutrients? Does the government subsidize unhealthy sweeteners the way they subsidize and get corn into so much of our unhealthy food? (That's why fast food is so cheap.) The whole situation is so upsettingly twisted! I don't even know what the most pure form of sugar!

Ok, it's gotta be those ^^^^ sticks, so what's the next step after that?

HOW in the world am I going to be able to eat as healthily as I desire in college?! Pasta & rice will probably be white....they'll have whole wheat bread....I'm already bringing my own cereals....corn syrup and sugars will probably be very hard to continue to try to get away from, no one's gonna make me honey sweetened desserts. *sigh* God's gotta have some good plan for me....

Chocolate cake made with honey

I had super high hopes for this cake because the batter smelled SO good!
It's definitely decent for a cake with a healthy sweetener! The only thing lacking is a little sweetness (oh, I didn't make the frosting), so whipped cream (without corn syrup!) would be a perfectly amazing little addition! I intend to make the recipe that I blogged about tomorrow! =)
It's not like a boxed cake, and maybe that's what I'm comparing it to; but I could eat that for the rest of my life for the good feeling that I'm eating something that isn't horrible for me. =)

Oh, by the way, I used cocoa powder, regular smart balance for the butter, and 1/3 of my flour was white whole wheat. Actually, the rest of my flour was white flour with the germ still in it. So I added some healthiness and took out some fat. Haha, I thought of throwing a little olive oil in there, but that won't cream.

Fruit, headaches, and a pet peeve

Just about an hour ago, I realized that I could try putting berries in my peanut butter sandwiches instead of trying to find or make a sweetener free jelly/jam! I can't wait to try it! Why would I need sweetener added to my sweet fruit?

I also just tried mocha latte (ya, that's a fancy name that I just made up b/c I know those words involve milk and chocolate; someone from JoeBean would straighten up my coffee lingo) to get rid of a headache.  And while I have chocolate syrup to use up (and not buy again!)....I know that even processed sugar is better than the corn syrup in that. =/ I figured a little caffeine and sugar is healthier than 3 ibuprofen that basically don't even work, I can't keep upping my dosage! I met a girl whose doctor kept telling her to take more painkiller and the stuff became toxic to her body! Not what I want!





I really hate to even take any pills; no, swallowing isn't my problem, I'm super willing to take herbs that will boost my immune system when I'm sick. I don't like the idea of our bodies sending out a warning signal that something's wrong, and us stuffing pills down our throats like that's the cure! I want to know WHY I have a headache, and what can take it away. I should really get back to stretching & strengthening my neck, because that's what I was given to do in physical therapy, and I think I had good results with that. Stretching and rubbing/massaging is always the first thing I do when I get a headache; hot pack on my neck & cold pack on my forehead is plan b.  Pills are my last resort, but sometimes I take them right off the bat if I have a huge day ahead that I can't let a headache ruin.
I hate the idea of going to the doctor when I get reoccurring muscle or joint pains, because I practically know that they're gonna tell me to take anti-inflamms and give me a PT script. There goes....$25?? Just give me the script...
(Ha....diagnosing myself was one of the things that got me interested in pursuing a physical therapy career. Thankfully I've been free of any major pains the past few months, but...I also have ridiculously minimized my activity. =/)
I really don't want a doctor who says, "Here, take this pill." I was pretty ticked to hear, on The Alex Jones Show (it was probably this video, but I don't feel like spending 13 minutes to find out), how little education doctors get in nutrition, how they're schooled to support pharmacy drugs! I never want to be someone who's "on medication," you know...for weeks, months, years. I want to try every lifestyle change and natural remedy if I'm ever diagnosed with something that needs consistent medication; I want to take care of my body so that it does what it's supposed to do.

Neat! Well, I eat beans, blueberries, broccoli, carrots, cherries, flax, garlic, honey, lemon, mushrooms, oats, and onions most on this list. Homemade granola is a home-run if there's flax, honey, grapes (in the dried, raisin form), oats, and olive oil in it!
So I could eat too much sugar and then follow with artichokes? I just cooked with them the first time yesterday, actually I cooked with them 2 days before that for someone else.
